Strawberry-Rhubarb Syrup with Ricotta Pancakes | Lisa's Kitchen ...

Without any care or tending at all, rhubarb grows into enormous stalks and leaves in the corner of my backyard every year from spring right through into late summer. It must be one of the most carefree food plants that grows in this climate. Although rhubarb stems are rich in vitamin C, dietary fiber and calcium, their sour taste means that they're ordinarily stewed with sugar and used for desserts like pies and cobblers ? that is why rhubarb was once known as the "pie plant" in the United States. Their sour taste also lends a wonderful tartness to strawberries with which they're commonly combined ? strawberry-rhubarb pies can be found all over around here in Ontario in the spring and summer.

Once it is cooler, I am going to make a pie from the harvest in the backyard. Hubby and best friend Basil are chopping at the bit in anticipation. In the meantime, try this for a weekend breakfast.

This beautiful sweet and tart rhubarb and strawberry combination also makes a great syrup for using on pancakes or ice cream or in teas, milkshakes or other drinks, and the best part of making this easy syrup is that straining the stewed fruits before reducing the syrup yields a delicious compote that you may want to consider using in a pie or cobbler too. I served up this syrup and compote on my famous light and creamy ricotta pancakes with plenty of syrup left over for ice cream when the weather turns hot again this week. The compote is also excellent served with ice cream.

Tips: choose firm and smooth rhubarb stems but avoid stems that are hard and rigid or blotched. You can also use frozen rhubarb and/or strawberries to make a syrup, but you may want to reduce the water slightly.

Strawberry-Rhubarb Syrup

1 pound fresh rhubarb, chopped
1 pound strawberries, halved or quartered
1 cup white sugar
3/4 cup water
juice and zest from 1/2 lemon

Bring all the ingredients to a boil over medium-high heat in a medium saucepan. Reduce the heat to medium-low and simmer, stirring frequently, for 5 minutes or until the rhubarb is soft.

Strain the liquid, reserving the pulped fruits for use as a compote, and return the liquid to the pan. Bring to a simmer again and continue to simmer gently, stirring occasionally, for 1/2 hour to 1 hour or until the syrup has thickened to a desired consistency.

Remove from heat, pour into jars, and refrigerate for up to 1 week.

Makes 1 cup of syrup and 1 cup of compote

Light and Creamy Ricotta Pancakes

4 large eggs, separated
3/4 cup whole milk
2 tablespoons honey
1/2 teaspoon vanilla
1 1/4 cups unbleached all-purpose flour
1 teaspoon baking powder
pinch of sea salt
zest from 1/2 lemon
1 cup whole milk ricotta cheese

Combine egg yolks, milk, honey and vanilla in a large mixing bowl. Stir in flour, baking powder, salt and lemon zest. Cover with a clean dish cloth and set aside to rest for 15 minutes.

Beat the egg whites until stiff peaks form. Gently fold into the batter, leaving a few white streaks. Gently mix in the ricotta, leaving small chunks of cheese in the batter.

Heat a non-stick griddle or cast-iron skillet over medium heat. Lightly grease the pan with butter. When the pan is hot enough to makes drops of water dance and sputter before vanishing, pour in 1/3 cup of batter for each pancake. Cook for 1-2 minutes or until small bubbles appear on the edges, then flip and cook for 2 more minutes or until the batter is set and the sides are golden brown.

Remove from heat and serve right away drizzled with strawberry-rhubarb syrup and with a spoonful of the compote.

Makes about 16 4-inch pancakes

Mitt Romney is walking a thin line on the sluggish economy, trying to keep his focus squarely on the nation's financial problems without appearing to be wishing things get worse.

For months, the Republican challenger has pointed to tepid recovery and jobs growth under President Barack Obama. Polls show it's his strongest argument for seizing the White House.

But he risks playing into Democratic accusations that Republicans are rooting for a faltering economy.

Economists insist the economy's on the mend ? but recovery is painstakingly slow and uneven.

Some of the best jobs gains are in presidential battleground states. That could alter the political calculus, perhaps in Obama's favor.

Obama was in Florida to speak to the same convention of Hispanic leaders that Romney addressed Thursday.

Florida's unemployment peaked at 11.4 percent in January 2010, but was down to 8.6 percent in May ? still above the national rate of 8.2 percent but enough to get Republican Gov. Rick Scott to boast, "When I said, 'Let's get to work,' it wasn't just a slogan."

"Florida is on the right track," Scott said in a June 15 release. His office denies reports suggesting the Romney campaign asked him to temper his sunny optimism.

Ohio ? another top swing state ? saw unemployment in May of 7.3 percent, well below the national average. Jobless rates in some other in-play states: Iowa, 5.1 percent; New Hampshire, 5.0 percent; Virginia, 5.6 percent; and Wisconsin, 6.8 percent.

"We've turned things around in Wisconsin," Republican Gov. Scott Walker crowed when Romney visited this week, adding it was time "to elect a president who can turn things around for America."

Romney ? heading Friday for a three-day retreat with donors in Park City, Utah ? happily notes the best gains have been in states with Republican governors.

Sources tell NBC News that prosecutors warned the defense if they put Jerry Sandusky on the stand, his adopted son was prepared to provide damaging testimony as a surprise rebuttal witness. NBC's Michael Isikoff reports.

Updated at 5:58 p.m. ET: BELLEFONTE, Pa. ? Jerry Sandusky decided not to testify in his child sex abuse trial after his lawyers were warned that prosecutors would call a surprise new witness ? one of the defendant?s own adopted sons, sources told NBC News. The man's lawyers said he?was prepared to testify that his father had abused him.

Matt Sandusky, one of six adopted children of Jerry and Dottie Sandusky, was observed by NBC News entering the courthouse, accompanied by Pennsylvania state troopers, on Wednesday morning as the defense was preparing to wrap up its case ? and apparently still wrestling with whether Jerry Sandusky, the former Penn State defensive coordinator, would take the stand.

Matt Sandusky, 33, has been a stalwart supporter of his father, visiting him at his home after he was charged with sex abuse and showing up at the courtroom last week to sit with his mother and other family members. But after the trial began, according to the sources, Matt Sandusky contacted prosecutors and agreed to provide testimony about events that he witnessed.

NBC News was unable to locate him this week for comment. But his attorneys, Andrew Shubin and Justine Andronici, confirmed that Matt Sandusky requested their assistance in arranging a meeting with prosecutors "to disclose for the first time in this case that he is a victim of Jerry Sandusky's abuse."

Shubin and Andronucci said in a statement that they would have no further comment.

"This has been an extremely painful experience for Matt and he has asked us to convey his request that the media respect his privacy," they said.

Prosecutors contacted Sandusky?s defense lawyers in the last few days to inform them that Matt Sandusky might be called as a rebuttal witness if Sandusky testified in his own defense ? news that alarmed the defense team and introduced a new wild card into their intense discussions about whether he should do so, said the sources, who spoke on condition of anonymity.

A source close to Jerry Sandusky told NBC News that "there was no one factor that led to the decision" not to have him testify Wednesday. Sandusky's lawyers were also known to be concerned that the defendant would be grilled on cross examination about apparently incriminating statements he made to NBC's Bob Costas in the "Rock Center with Brian Williams" show last November, including unaired portions that were played on the "Today" show for the first time this week. Defense lawyers also believed they had made some headway chipping away at the prosecution case this week, especially by playing a tape showing that police investigators may have coached Sandusky's alleged victims by telling them what other witnesses were saying about him.

The drama over whether Sandusky would take the stand continued to play out in court on Wednesday as defense lawyers were finishing their case. During a court recess in the morning, Sandusky's lawyers motioned Sandusky to enter a side room for a conference. They then joined prosecutors for a second conference behind closed doors meeting in Judge John Cleland's chambers. About 30 minutes later, Sandusky re-entered the courtroom, looking somber and chastened. At that point, Sandusky's lawyer rose and announced, "The defense rests."

Matt Sandusky first met his father at his Second Mile charity when he was 10 years old. He later went to live in the Sandusky home after he set fire to a barn in 1995. A judge approved the Sanduskys as foster parents for Matt and he was formally adopted by the couple when he was 18.

Matt Sandusky has been named during testimony in the trial. During the first day of testimony, one of the alleged victims ?listed in the grand jury report as "Victim 4" ? testified that Matt Sandusky seemed "nervous" when, after they played racketball with Jerry Sandusky, the three showered together and Jerry Sandusky then began throwing soap at him, "Victim 4" testified.

"At that point, Matt got up and left," he testified. "Well, not got up, but turned off the shower, went out and into another shower."

Dredd Trailer: The Post-Apocalyptic Enforcer!

The upcoming film Dredd, based on the British comic book character Judge Dredd (who previously inspired a Sylvester Stallone vehicle), has a new trailer out.

Starring Karl Urban (Star Trek, Star Trek 2) and Olivia Thirlby (Juno), Dredd will not be a sequel or a remake of that film, but a fresh look at the character.

Probably smart, as Judge Dredd was one of the worst films in the history of human civilization. Okay maybe not quite that bad, but still. Anyway ... trailer:

Badass. Hey, the zombie apocalypse is nigh. It's good to know that when those undead freaks take over, someone like Dredd will be on our side.
